Paleo Sponge Cake

Making delicious paleo recipes has been a something I have been really enjoying. Not so good for the non-egg eaters I’m sorry but these cakes are beyond divine, light and fluffy. They are the sort of cake that feels like a treat but also feels like you are putting goodness in your body. They really are guilt free goodies, plus they are super simple to make.

Paleo Sponge Cake

Prep Time: 5 minutes

Cook Time: 45 minutes

Yield: 6 inch double layered cake

Ingredients

  • ½ + 2 tbs coconut flour
  • 4 eggs
  • 2 tbs coconut oil
  • ½ cup non-dairy milk
  • 1/3 cup brown rice syrup
  • ½ tp vanilla extract
  • 1 tsp baking powder
  • ½ tsp bicarbonate of soda
  • pinch salt

Method

  1. Preheat oven to 350
  2. Mix the wet and then the dry ingredients together
  3. Grease a two 6 inch tins
  4. Place in oven for 40-45minutes. Turn the oven down to 325 half way through baking.

Serving ideas:
I like to have this cake with berry chia seed jam and coconut icing. To make the icing you just need to whip coconut cream until it is thick and creamy, add a touch of maple syrup to the mixture. I then like to cover the cake with desiccated coconut or toasted coconut chips. Yummy
