Paleo Melt in the Middle Pudding
This paleo melt-in-the-middle chocolate pudding is simply divine. When I was younger, we would sometimes have individual chocolate steamed puddings from Marks and Spencer’s (a UK supermarket) as a treat. I was in love with this dessert, warm, chocolaty and spongy… yummmmmy. I later came to love chocolate soufflés and other melt-in-the-middle puddings. When I first began creating this pudding I was flooded with memories that guided my taste buds to reach this recipe I have now.

There is no good substitute for eggs in these sorts of puddings, so I have used them here, but no grains, dairy or soya. I have added a little coconut sugar and sugar from the dairy free chocolate chips, but again it is to get the gooey middle this is needed.

Paleo Melt In The Middle Chocolate Pudding

Cook Time: 10 minutes

Total Time: 15 minutes

Serving Size: 2 people

Ingredients

  • 2 ½ tbs coconut sugar
  • 3 tbs coconut oil
  • ¼ cup dairy-free soya-free chocolate chips
  • 4 tbs cocoa powder
  • 1 heaped tbs coconut flour
  • 2 eggs
  • * I use a dry cup measurer for all my measuring (liquid and dry)
  • 7 oz capacity ramikins x 2

Method

  1. Preheat the oven to 180 C /350 F
  2. In a pot melt the sugar and oil on low heat for 1 minute, keep stirring.
  3. Add the chocolate chips and keep on a low heat until melted. Then put to one side to cool for 5 minutes.
  4. Add the cocoa and flour to the chocolate mixture and mix until well combined.
  5. In another bowl whisk the eggs and then pour them into the chocolate mixture and mix until all is well combined.
  6. Lightly grease the inside of the ramekin. Pour half the mixture into each ramekin dish.
  7. Place in the middle of the oven for 8 minutes, turn the oven off and turn the grill to high, leaving the puddings in the middle of the oven for 2 more minutes (keep watch to make sure the tops do not burn). If your oven has even heat top and bottom (mine is not very consistent with most heat from below, leaving the tops undercooked) then you may not need this stage, leaving the cakes in for 1-2 more minutes.
  8. Remove from the oven, leave to cool for 2 minutes and then eat. Must be eaten warm from the oven.
