Low sugar and oil-free Granola

Low sugar granolaGranola is my weakness, when I make a batch I eat the whole lot in two days, every time I go into the kitchen I take a handful and I seem to put it on everything. Therefore I have been working on the healthiest version of granola possible so I can eat my way through the jar guilt free.

Even though this granola is oil free and low sugar (refined sugar free) it is still crunchy and delicious and sweet. It is also really easy and quick to make as well as having the added benefit of being a good source of micronutrients with the spices, fruit and oats.

Low sugar and oil-free Granola

Prep Time: 5 minutes

Cook Time: 30 minutes

Yield: 4 cups

Ingredients

  • ¼ cup pureed banana
  • 2 tbs brown rice syrup
  • ¼ cup water
  • 1 tbs cinnamon
  • 2 tsp cardamom
  • 1 tsp ginger fresh grated
  • 2 tbs orange juice
  • ½ tsp zest
  • 3 1/2 cups oats
  • ½ cup seeds, nuts
  • ½ cup coconut flakes

Method

  1. Preheat the oven to 350.
  2. Place all the ingredients except the oats in a bowl and mix until well combined.
  3. Mix the oats in the mixture until all the oats are well covered.
  4. Place on a lined tray and in the oven
  5. Turn every 10 minutes for 25/30 minutes of baking. Add the coconut and nuts/seeds for the last 5 minutes of baking. (If the granola starts to brown rather than turn golden turn the oven down to 325).
  6. Leave to cool completely.

Serving ideas:
* On top of any breakfast item; porridge, chia pudding, muffins, smoothies, acai bowls.
* With yoghurt, milk, fruit
* With rice krispies and milk
