These heavenly gooey chocolate chip cookies are vegan, gluten-free, nut-free and refined-sugar free (except for the chocolate chips which have some refined sugar), and they make me very happy. The crunchy exterior and the soft goey interior makes them in my opinion perfection.
I have spent years, even before I had IBS, trying to create the perfect chocolate chip cookie based upon Bens Cookies. If you have had a Bens cookie you know what I mean, as you are already salivating, if you haven’t I would have said go and buy one right now, but now you can just make this recipe. So I hope you enjoy these yummys as much as I do.
I have created this recipe for just 2 cookies because I would eat them all if I made a big batch. You can of course make more than 2.
