All the ingredients are packed with goodness. Two slices of this bread is
around 185 kcal, 5g fibre, 8g protein, 47% Omega 3, 22% B12, 22% B2, 11% B5, 8% B6, 10% Vitamin A, 20% Vitamin D, 10% Calcium, 10% Magnesium, 14% Manganese, 18% Phosphorus, 22% Selenium, 9% Zinc.

Cook Time: 35 minutes

Yield: 10-12 Slices

Ingredients

  • ½ cup non-dairy milk
  • 5 eggs
  • 2 tbs coconut oil
  • 1 tsp apple cider vinegar
  • ½ cup coconut flour
  • ½ cup buckwheat flour
  • 2 tbs ground flaxseed
  • 1 tsp baking powder
  • ¼ tsp salt
  • few tbs seeds

Method

  1. Preheat the oven to 375F (190)
  2. Grease a loaf tin.
  3. Mix the wet and then the dry ingredients together
  4. Place in loaf tin, evenly spread in and sprinkle with seeds
  5. Place in oven for 35 minutes

I love this bread on its own, or with avocado, eggs, nut butter or even with sweet toppings like tahini and cinnamon and banana.

Eat within 2 days, I like to slice up half and place it in the freezer so its on hand when I want it.
