I am in love with the ease, deliciousness and health benefits of this bread. It is dairy-free and gluten-free.
All the ingredients are packed with goodness. Two slices of this bread is
around 185 kcal, 5g fibre, 8g protein, 47% Omega 3, 22% B12, 22% B2, 11% B5, 8% B6, 10% Vitamin A, 20% Vitamin D, 10% Calcium, 10% Magnesium, 14% Manganese, 18% Phosphorus, 22% Selenium, 9% Zinc.
- ½ cup non-dairy milk
- 5 eggs
- 2 tbs coconut oil
- 1 tsp apple cider vinegar
- ½ cup coconut flour
- ½ cup buckwheat flour
- 2 tbs ground flaxseed
- 1 tsp baking powder
- ¼ tsp salt
- few tbs seeds
- Preheat the oven to 375F (190)
- Grease a loaf tin.
- Mix the wet and then the dry ingredients together
- Place in loaf tin, evenly spread in and sprinkle with seeds
- Place in oven for 35 minutes
I love this bread on its own, or with avocado, eggs, nut butter or even with sweet toppings like tahini and cinnamon and banana.
Eat within 2 days, I like to slice up half and place it in the freezer so its on hand when I want it.
