Chia Seeds are heralded as a super food as they are incredibly rich in Omega 3 fatty acids , high in Fiber, a good source of Protein and Minerals like Iron, Calcium, Magnesium and Zinc. I add them to many meals to give my meal a boost of nutrients. My favorite use of chia seeds is in a chia pudding for breakfast, as they are such a simple quick breakfast, so versatile and delicious.

I have my standard chia breakie pot recipe but one day making a variation I created this delicious even more nutrient packed breakfast. I used hemp milk, as I love the taste, it is also a great dairy free alternative, a source of added Vitamin b12 and Vitamin D, which are difficult to find in non-animal foods. Then the spices add the delicious flavor and a source of key phytonutrients like curcumin, which have key health effects due to their antioxidant capacity, anti- inflammatory, aiding digestion, protects the brain, balances blood sugar and lowers cholesterol.

Prep Time: 30 minutes

Yield: 2 cups

Serving Size: 2 people

Ingredients

  • ¼ cup chia seeds
  • 1 ¼ hemp milk
  • ½ tsp ground ginger
  • ¼ tsp ground turmeric
  • ¼ tsp ground cardamom
  • 1 tbs maple syrup
  • ¼ cup water

Method

  1. Place all the ingredients in a bowl and mix until well combined,
  2. stirring occasionally for the first 10 minutes to prevent large lumps forming. Leave for at least 30 minutes, overnight if you have time.
  3. Serve in two jars/bowls and add toppings if desired
